Marble:
Pros: each piece is unique, historic material, natural material.
Cons: porous material, high maintenance, vulnerable to knife scars, expensive

Granite:
Pros: No visible seams, heat-resistant, more durable than marble
Cons: expensive, requires regular sealing to resist stains
Engineered Stone (Ceasarstone, Quartz, etc)
Pros: very durable, lots of options, less expensive
Cons: installed in slabs so seems are visible, less variation/character
Concrete:
Pros: won't scratch, heat resistant
Cons: often requires custom installs, needs sealing, can develop minor cracks
Solid Surface/Corian (acrylic, polyester, blends)
Pros: Low maintenance, non-porous, repairable
Cons: not heat resistant, will show scratches, not a natural look.
Plastic Laminate:
Pros: most affordable
Cons: can easily chip or scratch, not heat resistant
Wood:
Pros: warm, mixes well with other counter material, repairable, good work surface
Cons: not heat resistant, will show knife marks and discoloration
Stainless Steel:
Pros: Non-porous, practically indestructible ideal for high use and food prep (caterer's, chefs, etc)
Cons: Will show knife marks and dents, loud, shows fingerprints
Make sure you consult with your agent or designer before making these decisions. Side effects can include empty pockets, upset spouses, and a lack of Feng Shui.
